Chocolate Cake
1 cup (150g) flour
1 teaspoon baking powder
1/2 cup (50g) Cocoa
1/2 cup (100g) sugar
1/3 cup (80g) butter softened
3/4 cup milk (180ml) maybe slightly more (I usually use 200ml)
2 eggs
Preheat oven 170oC (2x 20cm cake tins) in my little oven otherwise 180oC (160oC fan-forces)
Put all the ingredients into a bowl and using a mixer on high for 4 minutes
Pour into 2 cake tins and bake for 30 minutes, let cool and then fill between the two cakes and add icing.
This recipe works for cupcakes too. Just pour into 12 patty pans and bake for 12-15 minutes at 18oC (160oC fan-forces)
Chocolate Icing
1 cup icing sugar (150g)
2 tablespoons cocoa
40g butter, softened
1 tablespoon milk
Sift icing sugar and cocoa together into a medium bowl. Add butter and milk. Using an electric mixer on low speed, mix until ingredients are combined. Increase speed to medium. Beat for a further 2 minutes. Spred icing over cupcakes, muffins or small cakes. Decorate
